Our cooks work the way they were taught at home. Nothing sits under a lamp, nothing is rushed, and every plate is cooked to order.
Rice soaked the night before. Chutneys ground each morning. Gongura brought in sour and bright. The kitchen opens at half past nine for tiffins and does not stop until half past ten at night.
